The upper echelons of New Orleans restaurants have enjoyed some time undisturbed by newcomers, but this opening in the Royal Sonesta Hotel is a double assault from chefs John Folse and Rick Tramonto. You can almost sense the big players eyeing them nervously.
The dining room is a lesson in sophistication, from the inordinately polite staff to the wine list, presented as it is on its own personal iPad. The menu is New Orleanian to its core, but presented with cheeky fanciness, such as the ‘Tale of Three Fishes’ and the piece-de-resistance ‘Bird in a Cage’, a guinea fowl serve up in a caraway dungeon. An outstanding wine last and stories surrounding you in the murals makes for a refreshing high-end dining experience. |
